does anyone have a good diagram of how a pool junction box is suppose to be wired. what else bonds to the terminal screws with the #8 coming from the pool light.
 
The min #12 AWG equipment ground from the GFC protected branch circuit light feed. The equipment ground from the pool light and any other equipment ground feeding other pool lights if any on this branch circuits. In essence all the equipment grounds needing spliced in this j-box

does the #8 coming from the light need to be bonded to the motor or just to the equipment ground going back to the GFI? What i mean is does the junction box need to be bonded to the motor?
 
No
There is no requirement to bond the equipment ground in this j box to the common bonding grid. However the lug in the light fixture that the #8 is connected to is usually part of the lug on the out side of the forming shell for this light fixture that the common bonding grid is connected to. So actually the equipment ground in the j box is bonded to the common bonding grid through this #8 equipment ground.
