I'm not sure how others do it but no one is ever going to get a price on a remodeling job from me until I see the job. Think of it this way, in many cases you will spend more than $170 on materials for a 50 Amp. range circuit. If you run home runs to the kitchen for $65 you will be lucky to break even. Charge at least $200 for every home run ( even if it's close ). The first thing you need to do is price some materials ( a roll of 12/2 NM is over a $100 right now ). I don't know what 6/3 is selling for because I haven't called the precious metals exchange today. Call a contractor in your area and see if they will give you a flat rate price on some of these items. Remodeling is much harder than new construction so make sure you charge for the extra effort. Good Luck, remodeling can be fun but it can also be a bear ( you know what I mean ).

All kitchens are different. Tell him time and material. Tell him each outlet takes about 1 hour to do something with the first time and each time there after. Tell him you do neat work, know the dimensions on the kitchen appliances and counters and good lighting practices and you will run into things that will not fit any price schedule like the new stove he sells them will require a neutral and a new range circuit or the wall he removes will have the house panel in it and will require redoing the condos distribution system to accommodate his contracts, that if he wants a firm price you will need to look at the work and give him an estimate and there will be an estimating fee of $95 wether you do the work or not and finally your agreement will be with the homeowner. Its called being in privity with the property owner and will ensure payment.

From another direction: why would an upgrade require a sub-panel at the same time? If it's because you'll have 44 circuits, I'd suggest using two 30-space 100- or 150-amp panels instead.

Its not for the same job. He just wanted general prices quoted.

At those prices your sure to get the job. and pay for materials, but how much money do you expect to net from the hours you put in?
Part of being new EC is learning you under bid stuff.
Hey you need to work & experience. Add more hours for demo & clean up & a few trips for lil pidly stuff aka wasted time.
You'll be fine.

Dont forget the special fixtures that nobody can get. Or the replacement of decomposing electrical systems in older properties. Remodel time for me is at least 3 times new construction. And I have been EC for 1-1/2 years and learned the hard way. Hell I waited an 2 hours while a designer looked around there office today for the fixtures for the job, then I had to tell them they were the wrong type and count. Time plus material and you cant go wrong.
