I am building a PV System that is going to have 2x 32 amp inverters feeding my electric panel. My utility company show examples of a load side tap. Since I would not be tying to the load side bus work, would I still have to adhere to the 120% bus feed rule?

Let me pull this one. Deeper research and Load tapping doesn't buy me anything but breaker space on the panel. Bus still isn't over current protected

Yes, if you tap conductors feeding an MLO panel then the conductors are just an extension of the panel bus.
