PVC Jacketed MC or UF cable?

I need to feed some indoor AC units in a hotel and would like to run a cable from the rooftop unit to the indoor unit along side of the refrigerant piping. There will be no chance of using a junction box to switch between MC and Pipe as they will cover it up. The building is 2 stories and some of the indoor units are on the first floor. Each rooftop unit will feed up to 3 indoor units.

Can I run a #12 UF cable inside above the ceiling through the wall and onto the roof alongside the refrigerant piping? This would be my best solution for speed and getting the wire installed so they can close in the ceilings.

My other option is to run MC down the hall and into the electric room. Then I would switch to conduit and run alongside or even in the same feeder conduit that feeds the rooftop units.

I even thought of pvc jacketed MC but I think I am alowed to run NM cable by code since it is only 2 stories.

The architect just speced running 3 #12's along with the refrigerant piping to the roof. The job is located in Virginia South of Roanoke if that matters.

Any other suggestions would be appreciated

Thanks in advance

First the UF can't be installed above a drop type ceiling in this application. If you are installing it above a "hard" ceiling you are good to go as long as there are no local codes that prohibit the used of NM or UF in this occupancy. Also note that you are limited to the 60?C ampacity.
MC cable listed for wet locations should also be ok.
