I would like to understand what seal offs should be used with SOOW cable inside C1DI environments when being used in relation with C1DI device enclosures. Where should I start looking for answers/understanding this?

I believe I would begin by determining if SOOW were permitted in the first place. Begin in Section 501.10(A)(2). You have a lot of cross referencing to do. Once that exercise is complete, the proper cable and gland may be selected. The Hawke gland indicated in the link has limited application in Division 1. See the "Technical Data" tab. Several manufacturers make a "TMCX" Type connector that may need supplemental stress relievers for unarmored cables.
