These are ugly and I am concerned about gaps behind the one cover plate. Is there a good way to install these with this type of material?

There are commercial products made for stone veneer finishes.

Or these: http://www.nitterhouse.com/masonry/...onry/veneer_stone/accessories/light_boxes.php

They're great for outdoor light fixtures where you need a flat surface for the canopy.

Mix mortar with what? My beater screwdriver? In what?? My coffee cup???
Works for me, but investing in a small pointed trowel and plastic bucket plus a five pound bag of patch mortar and optionally some color powder would be better.
It's not as if I were asking you to do plumbing. :)
