They're great for outdoor light fixtures where you need a flat surface for the canopy.

Any suggestions on what to do after the rock is already up? I got a situation I am currently working on.

Build it out flush with mortar to wider than the cover plate? Use a box extension if the box is already set too deep.
Color the mortar to match the stone.

Mix mortar with what? My beater screwdriver? In what?? My coffee cup???

Works for me, but investing in a small pointed trowel and plastic bucket plus a five pound bag of patch mortar and optionally some color powder would be better.
It's not as if I were asking you to do plumbing.
