Recessed halogen lighting in our kitchen

We have a single incandescent recessed light over the sink in our kitchen. The light works good but its only casting a light down on the sink instead of more on the counter top and its a little dark for our liking.

I have heard great things about the halogen recessed setups and wanted to install two above our kitchen sink

We have trusses so there is plenty of room for lights and wires but I was just wondering what the best light fixture out of this setup would be to get

We don't really want to make a huge hole in the ceiling to get this thing attached but if we have it we will...just a little more work.

I'm also going to use an MR16 halogen bulb...They have a nice light to them

BTW, here's a few photos of the current lighting layout

That little cutout area where the 60W lamp is now is 7' 6" x 11"




If any good products, we would like to get the materials from either Lowes or Home depot
I'll also stop by Cooper electric to see their prices on the fixture but it's nothing important

Is the area above the ceiling insulated. No one I know of makes a remodel can for MR16 bulbs that can be in contact with insulation

The old work low voltage cans are not usually IC rated as big Vic hinted. But by the looks of your soffit, you can probably maintain the 3" clearance. I use the MR16 low voltage cans a lot in the kitchens. They are great for those willing to spend the money. I use Juno IC44 new work usually. I think the old work version is a TC44.

There is a trim kit to use the can you have and convert to the MR16.

The way I'm visualizing your soffitt, if there is insulation, you can probably do something in to create the 3" space. If there is attic above, you can do something from up there. If not, then there shouldn't be insulation in the ceiling cavity. Just above the wall. What they sometimes call "blockers".

turns out the Juno TV44R are the rework boxes,

You mean TC44R. I knew that but neglected to type it. Juno uses the R to designate between new work (no suffix) and old work (R). R for Remodel.
 
My dads not too thrilled about the whole recessed compared to track lights up there

He's thinking some time of mini track light setup with halogen bulbs..were thinking 2-3 lights on the track

I've never seen or installed any mini track lights like this but on TV they had this nice thin strip that was mounted on the ceiling and the lights just clipped right in


So, Any other ideas on what type of lighting we could put up in this area?
