Sorry to repost but I feel main question post #1 has not been responded to additionally auguie keeps on mentioning controlling which neither in code nor has anything to do with breaker sizing. Also wether equipments in thread is considered by some as appliance while others they are not is not clearly responded to.

Tell the designer to show circuits, conductor sizes, OCPD's and what he expects the connected loads to be in the panel schedule and forget the rest.
The manufacturer and their equipment is no concern to a plan reviewer. As a plan reviewer do you scrutinize bidets and who makes them?

Having done commercial kitchen systems, what kind of controls are/will be in place?

Manual switches only, a control system built into the hood, etc?
