Orginally in my job I was a helper on a well rig. When the rig was drilling I was sitting and read McPartlands Electrical Handbook. Later I became the electrican, designing and installing electrical services for production wells, 25 to 100 hp, up to 800 gpm, typically set at 300 feet.
The NEC does cover submersible pumps. They are no different than any other load.
UL does list a submersible pump cable, which would be per 110.3(B)
Splices would be per Art 110.
Motors, motor ciruits and conductors are per Art 430
Services are per Art 230
Just size the conducotrs for 5% VD from the pump to the service drop. Use larger conductors from the controller to the well head, then you can use smaller ones down the drop pipe.
Most of my wells are set with 6" pipe. Takes 6 guys and some really big chain tongs to screw toghether. We are lucky in the boom truck can pick 40 feet of pipe in one shot, saves a lot of time.
Bennie is right, get the instructions for the pump and controller and they will tell you the type of cable to use. All of the mfgs have charts and tables.
