What is the diference between "standard" and "optional". When do I use one or the other? My calculation results are about 50 or 60 amps different. I need some advice before I make a decision on a room addition in my jurisdiction.

Either one is correct and there is always a diffence in the end results, this is the reason people may choose to use one over the other.

The purpose of the load calculation is to determine the minimum that you must allow for, when designing the service or feeder. If you do the calculation two ways, and come up with two answers (which you will, as Roger pointed out), you are permitted to use the smaller of the two answers. You don't have to; you can install a service based on the larger answer, and the owner might eventually be happier with the result. But that is not an NEC consideration.
