Residential load calulation

From one of the load calculation spreadsheets that are available on this form , I have determined the size of my service to a large home to be 380 amps, or as the spread sheet showed a 400 amp service. I have decided to install a 600 amp service and ct this, any thing over 400 amps here must be ct. This large home plan shows a future pool and pool house and unfinished basement that will be finished at some time. My real question is if I had decided to go with the 380 amps originally calculated could I use my 400 amp meter socket that is only rated at 320 amps continous load

Yes.

On a side note only a licensed architect or engineer is permitted to design the electrical service to a dwelling structure over 400A here in Florida. Make sure to check your local building codes on this issue.

Yes you could unless 320 amps or more would be continuous, which is probably more than a far stretch of the imagination.

I would double check the calc's of the speadsheet you are using, and make sure you allocating the right items to the right places. A 320/400 will cover a serious home - shifting to 600 unnessesarily will break the bank a bit, best to be sure before continuing. But if they are OK with a 600, to cover the furture add-on campus - then go for it!
