The NEC definition of a kitchen is an area with a sink and pemanent facilities for food preparation and cooking. If the room you are wiring meets this definition, then all 15 and 20 amp receptacles do require GFCI protection. However, other rooms associated which don't meet this definition, such as equipment rooms or pantrys do not require GFCI protection unless they are within 6' of a sink.
Also, GFCI protection is not required for hardwired appliances (only receptacle outlets). You can always cut the cord and hardwire the appliance if tripping is a problem, however, you may void the appliance warranty. You must follow all manufacturer's instructions.
