The NEC does not cover the wiring of a refrigerator, so there won't be a code reference.
ETA: if you mean the insider of a cooler like in a store, I've always used THWN.

THWN will be fine in that application (inside the appropriate raceway).

NEC does not address this, but manufacturers specifications will.
In particular you will have low temperature limits for installing conductors, and a different low temperature limit for using conductors once they are already stationary .
See for example: https://www.awcwire.com/blog/how-to-properly-install-thhn-cable-during-cold-weather which prohibits installation operations below 14F, but operation is permitted below this temperature (minimum operating temperature not specified).

If you must _install_ these conductors when the unit is already cold, you might need to use a non-standard wire type, or might need to heat the conduit for the duration of the install.

I've used THWN, MTW, SO cord and PVC raceway inside freezers down to -20F.
Matter of fact I've installed cable outside when the temperature was -15F.

The manufacturers typically specify that it should not be handled at temperatures below -10°C (14°F). However after it has been installed, that does not apply.
