Can we use RHH-RHW-2 in conduit? If so, how many wires of 3/0 cu?

Yes, as many as NEC allows for the size you did not specify.

310.13 Conductor Constructions and Applications .
Insulated conductors shall comply with the applicable provisions of one or more of the following: Table 310.13 , Table 310.61, Table 310.62, Table 310.63, and Table 310.64.
These conductors shall be permitted for use in any of the wiring methods recognized in Chapter 3 and as specified in their respective tables.

Wish we had an underline function , Anyway the last sentence applies. Be sure to review the "Application Provisions" column for potential restrictions of Table 310.13 conductors in other applications, but RHH/RHW-2 is fine in conduit.
