In a kitchen, I have to run a cooktop circuit to an island, and its a concrete floor. How deep does the concrete cut have to be ? Thank you

Just deep enough to cover the raceway or cable that you're using.

I would suggest rigid PVC. If you break through the concrete, like for a larger conduit, keep some as fill.
