What is S.O. cord? Is this a particular type of cable (physical construction), or is it a field term for describing a general type of cable.

It is not a cable, it is a cord or flexible cable. Art. 400.

Specifically I suggest Table 400.4, you will find SO along with many other cord types.

So an S.O. cord would have a lower ampacity than a cable of equivelent size at 75deg?

For instance in table 400.5 #2 S.O. has ampacity rating of 85 where a #2 AWG cable is rated for 115A.

not sure where you got "85". In my book ('08) it would be 80 with 3 ccc and 95 with 2 ccc.
