I need to mount a low voltage proximity sensor on a suspended ceiling. Can i just use a short piece of pine board up on the T bar and screw it in place. It does not measure up to a box size.
 
Generally those sensors use Class2 wiring so no box is required for splicing. We often attach those with 1/8" toggle bolts.
 
I would use toggle bolts, but its the cheap tiles made up mostly with fiber glass insulation.

If you need a large "washer" for the toggle bolts, cut a square of lauan plywood, and place your toggle bolts through that (on top of the tile). It will help spread the force, and the toggle bolts won't pull through. A sheet is cheap as chips at HD or Lowes too.

How much does your sensor weigh?

Even on "regular" tiles it don't take all that much weight to make them eventually sag when they are supporting something - I'd suggest at least the board you mentioned spanning between T bars to prevent that from happening.
 
I understand that you are installing a LV sensor. One option could be to just use a box on bar that is made for suspended ceilings instead of reinventing the wheel.
"does not measure up to a box size" kind of means even if you used that, would require additional fabrication to make it work.
