I'm trying to follow this thread, but I am not able to.
What is the answer to the OP's question? Should the service disconnect be sized at 600 amps (with 600 amp fuses), or 800 amps (with 700 amp fuses)?

I see that branch circuits are required to be designed to 125% for EV chargers because they are considered continuous load. I assume a service that is designed solely for EV chargers would also need to be sized for 125%. But how does one get to that conclusion via the NEC? 220.40 says...
