I am putting in a 2 gang meter socket that will feed 2 200amp load centers. What size wire in copper should i use to feed the meter socket?

You need to use Art 220 and calculate the load on the structure and size your service based on that number, otherwise feed it with 500kcmil Cu which in all probability overkill but you need to show that is the case.

Right now it is a shell and nothing inside. Owner wants to use it for storage for now and who knows down the line. How do u handle the unkown

You'll need some kind of load calc for your permit.

Locally, without documented load calculations, the requirement would be for 500 kcmil Cu.

As others have mentioned you need a load calculation or size the SEC's for the worst case scenario as Augie has mentioned.

If it was underground the poco would likely pull 350 AL to it.
