Generally speaking......Can I assume that service conductors run from the utility to the meter can and that feeder conductors run from the (load) side of the meter can to the circuit breaker panel?

Generally speaking, no !
That "definiton" might fit a number of underground service installs as to POCO or the customer being responsible for a certain scope of the wiring. but the NEC states:

Service Conductors. The conductors from the service point to the service disconnecting means.

generally meaning all condcutors ahead of the service disconnect, on both sides of the meter, are Service Conductors

No. They are unfused service conductors until they hit a disco and OCPD.

Feeder. All circuit conductors between the service equipment,
the source of a separately derived system, or other
power supply source and the final branch-circuit overcurrent
device.

230.66 Marking. Service equipment rated at 600 volts or
less shall be marked to identify it as being suitable for use
as service equipment. Individual meter socket enclosures
shall not be considered service equipment.

I have a commercial structure that has a bank of 6 meters on the outside of the building, easch meter has its own disconnect. From each meter, there is a 2" conduit running overhead in the interior of the building (exposed conduit) to the other units seperate electrical panels, each with their own disconnect. My questions is that the conductors that are in the 2" conduit running inside the building called service or feeder conductors?
Thanks

with each meter having it's own disconnect, the conductors in the 2" conduits would be feeders, generally speaking.
