How is a hot tub calculated. Separate the heater from the pump or all together?
What about line-voltage landscape circuits?
What about an existing 40amp sub-panel to a shed?

Are you talking service? or just branch circuits?
 
For the service, the Hot Tub total load should be used. Are you using the standard or optional calculation?
Landscape lights will be calculated using the VA value of the lights, just like any other lighting load. If they will be on for 3-hours or more, then they will need to be considered a continuous load.
There will be no load calculated for a sub-panel, however the loads in the shed will need to be calculated and added to the dwelling load. A panel does not add load, but the circuits fed from the panel may or may not add load and will need to be figured.
