I have a 161 KVA 480 to 120/240 single phase transformer. I plan on feeding it with a 400 amp 480 2 pole breaker. On the secondary I am going to feed 2-200 and 1- 100 amp main breaker panels. And of course all of the necessary grounding and bonding on the secondary.Anyone see any problems with my math?

Math is fine. Slight concern about your primary being large enough considering inrush.
(you sure it's not a 167 kva, 161 is odd size..changes little, but odd)

Sounds like you aren't even getting close to taxing the transformer. Depending on the load calculations, you may be able to get by with a 100KVA transformer. I agree with Augie, 161 (vs 167) sounds suspect.
