I have a 1200 ton Chiller, MCA is 1192 amps at 480 volts with a MOP of 2000 amps at Name Plate. I looked at the Table under 75'C i'm thinking 4 sets of 350 MCM should do it. Am I correct? I'm in CT which adopted the 2014 NEC.

If your MCA is 1192A, your conductors total ampacity needs only to be sufficient for that, not the 2000A MOCP.

3 sets of 250 kcmil CU would work. 3 x 405A = 1215A

I think that you got the wrong table 250 kcmil is only good for 255 amps/set.

4 sets of 350's will work 300*4=1200
