Would these be covered in the NEC? Where? Specifically, whether they need to be plenum rated or not in a dwelling unit?

Article 640.

They don't need to be plenum rated, unless you are installing them in "other space for environmental air", which is unlikely.

Actually, they are being installed in the area above the ceiling so I think they might need to be plenum rated.

Just becasue they are above a ceiling doesn't mean they are in an air handling space. I have never seen a plenum ceiling in a dwelling.

Is there NM cable above the ceiling? If so, that would be a violation if it is an air handling space.

You're abosolutely correct. Theres no air handling going on in this ceiling space and plenum rated cable will not be required.

Any speaker wiring in that dwelling must be listed for the purpose according to 725.82
