So I was going to do a dethatched garage using #3THHN 100A, all terminals rated at 75 degrees. In the house I was going to run 1/0 SER to a junction box and use splices that are rated. Once you go 75 degrees does is that now needed all the way back to the panel, or can I bury the SER in insulation?

#1/0 Al is rated for 100 amps at 60° C so you're good even if in insulation.
