Splicing from 60 deg rated cable to 75

So I was going to do a dethatched garage using #3THHN 100A, all terminals rated at 75 degrees. In the house I was going to run 1/0 SER to a junction box and use splices that are rated. Once you go 75 degrees does is that now needed all the way back to the panel, or can I bury the SER in insulation?
 
You can splice 60 to 75 but the ampacity will be based on the lowest rated conductor.
