Splicing/Splitting Romex

So I'm remodeling a bathroom. There is currently one vanity light centered above the dual vanity. I want to split it and install 2 smaller vanity lights, one above each sink. How would I do this without having a wall plate visible in the middle of the wall? I know I'm not supposed to splice or split romex inside the wall unless it's in an "accessible" junction box.

Mainly concerned with safety here. If I were to put in a junction box, split the wires inside and run out to each light and then drywall over it, is that unsafe? How is that any less safe than a junction box with a wall plate over it? Or is it just not to code because nobody in the future would know the junction box is behind there? This is a very common remodel and I find it hard to believe electricians would replace the entire run of romex to the switch to do this. You'd have to open up the entire bathroom wall as all the romex is usually stapled to joists.

Any info is greatly appreciated.
