It could...zinc and stainless are far enough apart on the galvanic reaction chart that in the presence of an electrolyte the zinc will corrode.

Those should work. I believe it's a closed-cell product. I think it's primary purpose was for vibration dampening.

I do not see any issue with this at all. Does this chiller yard have cooling towers? If so, I would highly recommend using schedule 80 PVC or PVC coated rigid because that EMT will not last long in that environment.
