I have a project in a hospital to complete. I need to build a 480V-3P main panel to feed an MRI machine. Currently the only supply available is 3-P 240 with a 208HL. Is there a transformer out there to get the the needed 100Amp 3-P 480volts?

What does "3-P 240 with a 208HL" mean? If you are going from 240 or 208 to 480, you can't use a buck-boost transformer.

You have a 240v 3ph available and need 480v 3ph 100A. (The 208v high leg is useless info at this point) Correct?

Minimum 112.5 kva xfmr 240-480 3ph 3 wire delta-delta

i will agree with others you need a real transformer to change the voltage from 240 to 480 set up and size will be min of 112.5 KVA

but for MRI room i think there is other code will show up but right now i just cant say it without looking up the nec code right now i am sure other will help you with this set up

just run delta to delta if the load is only 3 phase without netral but if need netural then run delta/ wye transformer to bring out the netrual [ you may have to check with the NEC code and their local code related with this set up i just don't want say wrong word and get it mistake here ]

Merci, Marc

Keep in mind that, when doubling voltage, each ampere used at 480v will result in two amps used at 240v. That means your 100a 480v panel will require that the transformer be fed via a 200a circuit.
