sub panel in doctors office

need to install a 100 amp subpanel in small doctors office and wanted to see if I can run SER cable or does it have to be single wires run in conduit. it will be running above a drywall ceiling? thanks
 
Article 338.10(B)(4) states we must follow the installation of Part II of article 334. Article 334.10 allows se cable in Type III, IV, and V construction
 
i read through both articles and just want to make sure I understand. even though it is a drywall ceiling it will have a access panel does this mean it will be considered an "open"run as per 334.12? I have all the exam rooms done in HGMC and the rest of my wiring done in mc as per 517. just not sure about this cable.
