I have a 200A main panel in my house and want to put a 100A sub in pole barn. I have 2 spare 200A panels ML/MB. Am i ok to feed the 200A MB panel in pole barn from a 100A breaker in my house panel?

Yes. you could supply a 600 amp panelboard from a 100 amp feeder and there is no code violation.

Supplying a 100 amp panelboard from a 600 amp feeder however all comes down to some details particularly related to feeder tap rules as to whether that is ok or not.

Yes, but the barn will need a disconnect, either outside or nearest inside.

A main breaker can be that disconnect if it meets the location requirements.

Yes; as long as the rating of the OCPD protecting the subpanel is equal to or less than the subpanel busbar rating, the bus rating in the sub is irrelevant.
