I have a project that requires tankless water heaters and would like to use the available 480 3 phase. Does anyone have suggestions for highly reliable ones that will work well heating reverse osmosis water?

Not a lot of details in your post, but in my view using electric resistance type tankless to heat water is a very poor choice for most applications. Just because you have power available to do this does not mean it is good choice.

I agree completely. But, wouldn't you agree that if we were going to use tankless electric water heaters, and 480 is available, using regular 240 volt single phase units make less sense?

I've never seen a reliable tankless electric. I've only ever dealt with 240 ones but they're always finicky and plumbers have issues with them.

From an efficiency standpoint, no. The voltage is irrelevant, energy is energy. The voltage does not change this equation. Residence water heating is incredibly inefficient, especially tankless.
But, yes, if you are insistent that you want to go this route, then the higher voltage in most cases would be a better choice due to less current making the circuit half the ampacity.

No prob. They have single phase and three phase versions. McMaster-Carr, Johnstone, CD Jones, etc for sourcing one.

They are designed for low volume water. Like handwashing, etc. You could hook up a shower to one and get 120F water or so. At low volume.
