I may have to wire a single household double oven. I was thinking that I used to size the wire and OCP at 125%.

The branch-circuit rating for an appliance that is a continuous load, other than a motor-operated appliance, shall not be less than 125 percent of the marked rating, or not less than 100 percent of the marked rating if the branch-circuit device and its assembly are listed for continuous loading at 100 percent of its rating.
Or do I use this?

Branch circuits and branch-circuit conductors for household ranges and cooking appliances shall be permitted to be in accordance with Table 220.55 and shall be sized in accordance with 210.19(A)(3).
Thank you.

I'd say which ever is more convenient for you.

Use 210.19(A)(3) in your case....They are not continuous loads.
Thats what I was thinking. Even on a holiday the double oven could be on for 8hrs, yet not at 100%.

Thanks all.

Some have said that in the self cleaning mode the oven runs at full output for more than three hours which makes it a continuous load. Not sure if that's true and sans documentation I would agree that it's not continuous.

however I have witnessed my WIFE burn something for 3 hours continuous..;)
A friend of mine called a while back and said his smokes didn't work. I asked if he pushed the test button and nothing happened.

He said no, we had a small fire. The wife was warming up a pizza(in the box) in the oven.
