If I have a main switch in a main switchboard feeding another switchboard with say with 3 sets of 750's and you denergize/disconnect one of the sets there is no way the switchboard could remain live with just two sets feeding it if the 3 sets were sized correctly? Thanks

You would need to change the OCPD ahead of the two sets to a size that was code complaint for their reduced ampacity. Also you would need to ensure that the existing load does not exceed the smaller OCPD size.
