Will someone explain as to why some fixture wires are limited to 300 volts while the majority list no limits on voltage at all ? Are we to look up the manufacturers nomenclature for a particular wire ? Thanks :?

See the text of section 402.3. It tells you that fixture wire is suitable for operation at 600v, unless otherwise specified.
