I am looking for some basic educational information on transformers. How to identify different types (i.e. wye vs delta), how to identify based on voltage measurements in panels, etc.

Reading the nameplate is usually a good starting point.

Don't know how this will paste but this is a typical basic minimum information specification that we use:

Primary Voltage : 11 kV 3 phase, 50 Hz, Taps at *2.5% and *5%

Rating : 850 kVA
Secondary No1 Delta Connected, 425 kVA, 690 V at no load.
Secondary No2 Star Connected, 425 kVA, 690 V at no load.
Impedance Approx. 8% - 9%
Type ONAN
Ambient 40?C max.
Fittings HV/LV Cable boxes
Marshalling Box
HV off circuit tap-changer switch
Conservator
Oil sight glass
Oil level gauge
Winding temperature RTD
Silica-gel breather.
Lifting lugs

Really, the nameplate is the best source of information.
There are actually several conditions that can cause one type of system to look like another if you simply look at field voltage measurements.

Speaking of voltage measurements, try to make all 10 of them whenever possible.
(3) Line-line
(3) Line-neutral
(3) Line-ground
(1) Neutral-ground.
