transformer grounding

not sure I understand, but you can connect as many grounding electrode conductors as you desire to a grounding electrode.
Can you provide some specifics to your question ?

The plans are calling for me to connect to the Ex. XFRM grounding in exisitng electric room.

I thouht you could only tap onto an existing transformer electrode if the wire size was 3/0

terminology game :)
A common transformer grounding electrode CONDUCTOR (your post omitted the "conductor") must be a minimum of 3/0 per 250.30(A)(4).
If the grounding electrode itself is exposed (ground rod, building steel, etc) , you can, obviously, add an additional connection to that.

It would really simplify things if you avoid abbreviations like EX. (I assume existing?) Common abbreviations lie XMFR most do understand.

Yup, #3/0 is the minimum size that you can use for more than one transformer.
