You have to keep in mind that your transformer is two windings. A 10 kw transformer could be damaged if you had 2 kw worth or 120v load on one phase and 8 kw on the other.
In most cases you loads are distributed evenly enough not to be a problem but you do need to keep an eye out for highly unbalanced situations.
As in the example above if you looked at that as a 10 kw total load and used a 10kw transformer, the one winding (5 kw) would be overloaded.
