I have a 3 phase 480v circuit with 12ga wire, does anyone know of a good small 480 to 208 volt transformer I could install on this circuit? The output could be 240 or 208, either one would work as I only need single phase power in this location
 
Ideally I'd like a NEMA 14-50R, not sure if I could achieve that feeding the transformer with 12 ga wire but I'd be happy with a 30 amp circuit if nothing else
 
since you need single phase power you sort of limited to 20 amps @ 480 volts = 9.6 kva by your primary conductors. So anything below that is a possibility.

If you can divide single phase loads across all three phases then you can increase that by 1.732 factor so about 16.6 kva max load for a three phase transformer.
