I feel hesitant to allow foam plastic insulation to be sprayed around IC fixture located in a cathedral ceiling.Should I be?:-?

Check with the manufacturer to see if the fixture is designed to be encapsulated within spray foam insulation.

I know that the Juno cans I use are not rated for encapsulation in spray foam. I had to box around the cans and allow air space to use these can in spray foam.

Key word is "around".
Around is fine. . In contact is fine. . But if it has some adhesives properties and will adhere to the can, then I would take a closer look at what the listing will allow.

Absolutely !
A spray with adhesive properties would prevent access to the junction box
