Since the UPS is a backup system, should its power be considered when calculating the feeder or only the power of the loads it supplies? From the first entry it seems that if we consider its power we are doubling the calculated load and I have searched the NEC about it but the only thing I find is chapter 645.11 and 700.12 (a), but they do not clarify my doubt.

You don't have to count loads that are never coincidental however UPS loads don't qualify for that because after a power failure whatever it takes to charge up the batteries is coincidental to the regular loads so has to be counted. Typically the battery charging current is nowhere near the maximum output current of the UPS.
