I'm working on a data center project that has a separate room designated for the UPS's. Is there any code reference that prevents me from installing the UPS's in the electrical room?

No, assuming clearances are maintained you are good to go.

Don't forget that UPS systems can make a lot of heat and that could be a problem in an under ventilated room.
