Use 12-3 or 10-3 instead of 12-2?

Is there anything (code-wise) preventing the use of 12-3 or 10-3 instead of 12-2, for a SA circuit in the kitchen, even if you're not going to use one of the conductors? Could you just "cap" the extra conductor, how would you go about doing this? Cut it short, then wire nut?

Last question: any problems running a 12-3 or 10-3 to a receptacle for a dishwasher, fridge, or range hood, and sharing the neutral? They do not need to be GFCI, correct?
