What is the consensus these days on size of feeder to new garages to accommodate possible future EV?

Is a 60A feed sufficient, or should I recommend a 100A feeder?

When I retired 3+ years ago, my town required provisions for 50 amps to be available for a charger.

I'd run 100A. You can't get any better bang for the buck than 2-2-4-6 mobile home feeder, even if EV charging wasn't part of the equation, for the wire. By the letter of the law you need to tie it to a 90A breaker.

Depends on what the specs on the garage are. Typically we're doing 100A or more for a 2+ car garage.
