Looking for suggestions on wiring type for interior commercial freezer/ cooler.

Is EMT with set screw fittings and standard steel boxes compliant?

Is PVC and non metallic boxes a better way to go?

LFNMC ?
Do raceways need to be set away from the surface with standoffs or strut for health dept requirements for cleaning?

Any suggestions appreciated

That is what I would use. You need something like duct seal to stop the air flow for any conduits that penetrate to the outside, but that would be the same for any exterior wall. The inside of a walk in cooler is dry enough to make beef jerky.

I don't think so. It's not likely that it will be a wash down area. That would be a health dept thing, not an NEC thing.

So there is no requirement for boxes to have threaded openings to keep possible moisture out?
