can I use a wall mount fan speed switch for 3 fans usinf one switch?

I assume you are talking paddle fans-- IMO no you cannot as most of the speed controls I know are not rated for 3 fans. The only ones I have seen that are rated for 2 fans are the variable controls and they make the fans hum. I would definitely wire each switch independently.
