wall oven and counter top stove-glass fused junction box

I am replacing a 28 year old wall oven and island /counter top stove with a newer set (5 years old)
I noticed the 8/3 conductor to each goes into a junction box,onder the counter and inside the wall oven's are two glass fuses ,as well under the stove top its junction box has 4 glass screw in fuses . The 8/3 conductor is fed from the panel from a double pole 40 amp breaker. Any installation instructions on line neither show nor talk about this kind of junction box. They only show a square"normal" box in which to make your connections.
Can I just eliminate the fused box for a regular junction box? Thank you
