Which license is required?

I would like to do service work on equipment in fast food restaurants. I would be certified on the equipment by the equipment manufacturer.
What electrical license do I require in the states of Oregon and California?

I would not know the answer. But let me help clarify the question. Do I understand correctly that you plan to work on the equipment itself, but not on the building wiring system?

If your working ON equipment, I don't belive you would need any license, other than a certification from the companies equipment your servicing. And possibly a refringent certification, if you plan on working on refrigeration equipment.

I suspect Charlie is right. I've never heard of any state requiring a license to work strictly on equipment. But, you never know. Considering the potential hazards, e.g., miswiring a piece of equipment so that its frame becomes energized, I could see a license being required somewhere.

Again, I don't know the rules in those "Southern States," but this is from the "Revised Code of Washington" (RCW 19.28.041). Please note that "or maintaining" is included in the rule.
(1) It is unlawful for any person, firm, partnership, corporation, or other entity to engage in, conduct, or carry on the business of installing or maintaining wires or equipment to convey electric current, or installing or maintaining equipment to be operated by electric current as it pertains to the electrical industry, without having an unrevoked, unsuspended, and unexpired electrical contractor license, issued by the department in accordance with this chapter.

ktm400sx, are you going to be running a company or working for the restaurant chain? If you are going to be running a business then check with the business license office, if they don't know they will point you in the direction of the correct authority.
