I am trying to locate a code reference regarding the use of stainless steel tubing (used in Dairy processing) as an acceptable method of conduit. This particular tubing would enclose low voltage wiring and control wiring in a 15 ft. run.

Makes no sense to "reinvent the wheel". They actually do make stainless conduit. Check out www.instockss.com

If the tubing is not listed for the purpose you can't use it, so what you propose won't fly.

Look at Article 344 - Rigid Metal Conduit. 344.2 Definition: .....Special use types are silicon bronze and stainless steel.

I misread the original post. I thought you were asking for a reference for stainless steel conduit.

Hbiss is right. Why not just use stainless conduit.
