Wiring methods for recessed LED lighting

I am a lighting designer and stuck on this after looking in NEC and googling. Gut remodel - to studs and joist - of a kitchen. 10 recessed low voltage fixtures - new work - happens to be a Nora NL-301 - with a transformer - and I'm installing in joists to be above drywall ceiling. With difficulty the fixture design does allow removing the cone - 3 screws - with attached junction box and transformer and snaking that through the opening if ever needed to service transformer, as I believe is required. What wiring method is acceptable? (under NEC 2003) I ruled out MC because it has to be supported withing 12" of fixture, which does not allow enough slack. FMC seems about the only choice in this situation. 1/2" is too stiff and big to allow removal so was planning on 3/8", but a struggle to pull and it has to be more than 6'. I might be able to locate one junction box within 6' of all fixtures but tight, not pretty, and with 8 fixtures, a big big box. Other option I considered was EMT to within 6' and then coupling for 6' whip of 3/8" FMC.

What am I not getting? Thanks.
