Interesting layout here. Don't recall ever seeing so many switches.
The space is very small, about 40x40 but obviously a lot of switch legs.
If you pipe or MC this how would you do it? Light fixtures are all off (2) 120v circuits.
I would think you want to run a conduit up from the switches to lights( or a box and branch your switch legs off) due to the qty of conductors

I would bring the two circuits to the switch box and a separate MC cable out to for each switch leg. That way you would already have the neutrals there if they're needed for the dimmers.
 
It depends on the building construction for me, but in genetal it's easier, faster, and better set up in the switch box to run separate MC cables.

That way each switch leg is in the appropriate gang when you make it up
 
Do you have an option to use a digital touch panel, with controllers mounted in the ceiling? Run a power circuit to the panel, and then low voltage to your controllers. keep all of the MC/EMT in the ceiling.
 
If you run one raceway, you will have a ampacity adjustment problem. Even though the loads are low on each of the switch legs they are all counted as current carrying conductors for the application of Table 310.15(C)(1). (310.15(B)(3)(a) in the 2017)
